Scrambled Tofu with Leeks

Ingredients for 4 people:

240 grs Nigari Tofu
One sliced Onion
3 finely shopped leeks
4 tsp Alcohol free Mirin
2tsp Tamari
Juice of 3cm grated ginger
¼ tsp sea salt

Simmer the tofu in water with 1 tsp of Tamari for 5mins. Stir fry the sliced onion in the saucepan for 5 mins with a drop of water, then add the shopped leeks and the sea salt, stir fry for another 5mins then add the Alcohol free mirin sauce with the ginger juice and some tamari sauce.
